Why Use Glucose Syrup?


In scientific literature, glucose, as it is known in daily life, refers to a specific sugar with a certain formula. Glucose syrup is used as a sweetener in the food industry. This sweetener is derived from cornstarch and can be used to replace sucrose to give products longer shelf life. In addition, Glucose syrup can sometimes be used to stabilize the texture of products such as ice cream and confectionery or to add a caramel color.
Glucose syrup is obtained by hydrolysis of corn starch. During this process, starch is first broken down into glucose and then converted into syrup by combining glucose molecules. In the production process, cornstarch is first mixed with water, and appropriate enzymes are added to achieve enzymatic hydrolysis. Then this mixture is heated and a pH adjustment is made. Heat treatment is used to break the starch chains. The glucose solution formed in this way is then filtered and purified. Finally, some of the water is removed and syrup is produced at the desired density. Generally, glucose syrup is produced on an industrial scale and is not made at home.
Glucose syrup can cause some health problems when consumed in excessive amounts. Consumption of foods containing high fructose corn syrup may increase the risk of obesity, diabetes, and heart disease. It is also known that glucose syrup can cause tooth decay. Some people may be sensitive to glucose syrup or have digestive issues. However, this does not apply to everyone and it is okay for most people to consume it.
