Honey is one of the most frequently encountered products for counterfeiting due to its production cost, high nutritional value, economic value and its presence in many desserts and food formulations.
Counterfeiting is usually carried out either by adding industrial syrups such as sucrose syrup, corn syrup to honey, or by feeding the bees with sugar. It is not possible to distinguish fake honey from real honey by looking at its sensory properties. By evaluating the numerical data specified in the Turkish Food Codex Honey communiqué and by using advanced analysis methods such as HPLC, it can be determined whether the honey is fake or real.
For example, fake honeys can be determined by analysis results such as more than 5% sucrose and less than 300 mg of proline amino acid. Therefore, since it is difficult for the consumer to determine that the honey he buys is real, he should research the producer or brand of the honey he buys well. Do not buy honey stored under direct sunlight. In addition, since carcinogenic substances such as HMF can form in honey that is highly heat-treated, they should pay attention to the brand of the honey purchased.
The gradual increase in fake honey in the market reduces the level of competition for both the consumer and the producer and our country in the international market. Along with fake honey, real honey producers are also indirectly affected by other bee products. For example, although propolis has many positive aspects to health, it is not widely produced in our country because it is not seen as a commercial value at the producer point. So much so that they think that propolis has no commercial value and discard raw propolis without evaluation.
