11 kg of milk must be used to make 1 kg of kasseri. Production flow as follows: milk is pasteurized and cooled to fermentation temperature, starter culture is added, calcium chloride is added, milk is pre-aged for 30-35 minutes, curd is broken, curds are collected, curd is heated, curd is suppressed, boiled, kneaded, placed in molds, rested for 12-24 hours and packaged.
Therefore, the recipe shared on social media is not kasseri production, but cheese pudding.
